Willie is passionate about fish so it’s no surprise that all things fishy feature highly on his menus. Such is his passion that for several years, in another life, he sourced the best fish and shellfish for some of the top hotels and restaurants in Scotland.

Each bottle of Summer Harvest starts its journey to the dinner plate from the rich and beautiful land of Perthshire in the heart of rural Scotland. The soil, the water, the air and the attention to detail ensures that each bottle is bursting with flavour and packed with healthy goodness.
THE PERTHSHIRE PRESERVES
Perthshire Preserves has just celebrated their 8th Birthday. Set up by Iain Mackenzie, an ex Cunard Hotel Officer in the Merchant Navy, and Kate Thornhill, ex hotelier, who were originally looking for a small catering business stumbled across preserve making. Since then they have built the business up moving from their home to a dedicated commercial kitchen a few miles away
